
San Diego’s Borrego Rooftop Kitchen + Cocktails has a new chef and with him, a new menu.
Chef Paulerio, a San Diego native, has created dishes that bridge the flavors of Southern California with global influences that reflect his diverse culinary experiences. The new appetizers, entrees and desserts are:
• Falafel bites, crispy, savory chickpea bites with raita, pickled onion and cucumber, and arugula, priced at $12.
• Crispydilla topped with melted white cheddar cheese and tamarindo pork belly, accompanied by chipotle salsa and spicy carrots, priced at $18.
• Achiote seared albacore, served with cilantro polenta cake, Torpedo onion, jicama salad and guajillo sauce, priced at $28.
• Seared Mano de Leon scallops, served with root vegetable hash, pomegranate seeds and arugula piri piri, priced at $32.
• Mojo de Ajo chicken, marinated chicken breast served with bean cake and grilled chayote salad, priced at $28.
• Scintilla Farm Mushroom Tajine, mushrooms cooked in a fragrant, spiced Moroccan tajine and accompanied by farmers market vegetables, dates, cous cous and piri piri, priced at $24.
Cardamom Pot de Crème, a creamy, indulgent dessert with lemon zest, honey Chantilly creme and a snickerdoodle biscotti for $8.
Borrego has several with standout cocktails to enjoy with the food, including the Borrego margarita with blanco tequila, Cointreau, prickly pear, citrus and a basil salt rim; the Sonoran Sunset, a combination of aged rum, amaretto, coconut cream, prickly pear and pineapple; the Espresso De Olla, made with vodka, spiced rum, espresso, roasted orange, cinnamon and clove; and more, all priced at $18. Of course it also sells beer & wine.
