Barclay Bar and Grill at InterContinental Creates Menu From French Brandy Calvados
There are now more apples in the Big Apple. At least in drinks.
The Barclay Bar and Grill in the InterContinental hotel has created a menu of cocktails from Calvados, the apple brandy from France’s Normandy region. In addition to 30 types of the brandy, Mixologist Jose Torrella has devised specific drinks to take advantage of the special spirit. They all utilize fresh herbs from the hotel’s rooftop garden.
Here’s the recipe for the Apple Mojo ($12) from Torrella’s touch:
• Mix: 1 ½ oz. Daron Fine Calvados, 1 oz Fresh apple juice, 1 Tbsp Apple butter jam
• Muddle: 8 Mint leaves, 1 Fresh squeezed lime, 2 Tbsp Sugar
• Add: Crushed ice and shake mixture,
• Top: with Club Soda
• Pour: Into a Tom Collins glass, garnish with mint sprig and apple slice.
