
It’s the over-the-top weekend brunches with exotic dishes, spectacular presentations and portions so big you can practically eat your way out of a hangover.
So when NoMad Bar opened in late March by MGM Park in the NoMad Hotel, it knew it had to step to the table in that area, so to speak.
And it has with something it calls the Brunch Playlist. Open Saturdays and Sundays from 10:30 a.m.-2:30 p.m., it features these items, paired with live music and wild cocktails:


- Brunchified Icons – NoMad’s Roast Chicken, one of the country’s most acclaimed dishes, has been reimagined for brunch with the Truffle Chicken Sandwich. It is stuffed with black truffle and foie gras is prepared for two and served in-between pillowy brioche buns – a must-try for brunch enthusiasts looking for the next, best thing.
- Liquids – The brunchtime “Cocktail Explosions” has drinks sharable for up to eight people. The Paint It Black explosion is a combination of tequila, fino sherry and velvet falernum mixed with the lighter flavors of smooth vanilla, lemon, and blackberries. Bottomless mimosas – a staple of Vegas brunches – are available with fresh-pressed juices including orange, peach, mango and pineapple grapefruit.
- Opulunch – NoMad Bar taps into the social nature of brunch with a wide selection of shareables such as the Smoked Salmon tarte topped with crème fraiche, trout roe, and an ‘everything’ crumble. There is also the “make it ridiculous” option which has caviar and blinis.
- Beat to the Brunch – Dishes that no brunch menu would be complete without make up the backbone of the menu, such as NoMad’s take on TheBreakfast Burrito stuffed with suckling pig, eggs, potatoes, spinach and chile de arbol; a luxuriously hardy Short Rib Hash with a poached egg and shallot marmalade; and the signature Lobster Benedict topped with a tarragon and brown butter sabayon.
“We wanted to create a brunch inspired by both the classic sit-down and party settings seen across the city,” said NoMad Las Vegas Executive Chef Mike Rellergert.
“NoMad brunch will blend the best of both experiences and deliver a dining journey suitable for all guests – whether they want to relax while enjoying indulgent brunch cuisine or dance at their table with friends while sharing large format cocktails. Anything is possible here.”
