Bright Lights, Big City Cocktail Features Rum Mixed With Pineapple Juice
When it comes to something important like National Rum Day, which is Aug. 16, you can’t just take cheap rum and mix it with a Coke.
It requires something special, a cocktail to really celebrate this uplifting spirit, a drink that satisfies one’s inner Caribbean soul, ideally while sitting at a tiki bar, on a boat, by the pool or on or by a beach.
Being makers of excellent rums imported from the Dominican Republic and available in the U.S., Ron Barceló rum knows that, which is why it created a special drink just for National Rum Day. It is a cocktail that, in the company’s words, “razzle dazzles imbibers” to enjoy on Wednesday, Aug. 16.
The cocktail is called Bright Lights, Big City. It is a blend of Ron Barceló Platinum, lime juice, pineapple, simple syrup and passion fruit purée. It is a Caribbean-style treat with a perfect balance of sweet and sour flavors.
Here’s how to make it, serve it and of course, drink it. .
Bright Lights Big City Cocktail
Ingredients:
• 1.5 ounces Barceló Platinum
• .75 lime juice
• .25 pineapple
• .5 simple syrup
• .25 passion fruit purée
• • A pinch of inch salt
• Thin pineapple “wheel”
The Finish:
• Line a rocks glass with half-moon pine slice add ice
• Shake and strain over and ice
• Garnish with a thin “wheel” of pineapple
• Drink and enjoy, then repeat the process to fully take in and appreciate National Rum Day
