One of the easiest, most delicious and nutritious meals you can make is chicken and rice.
The problem is, if you just “dial it in” then it won’t be all that delicious. You need to take the proper measures to make sure it tastes up to its potential and the best way is to follow the best chicken and rice recipe from Minute Rice.

Well, not really. If you have an Instant Pot, pressure cooker or slow cooker you can simply sauté some chicken breasts or boneless thighs and toss in some vegetables. Put that in the cooker, add some water and spices and then let the machine do all the work.

For those who like “gooey” touches to their meals, mix cream cheese into your rice. Or, broil Parmesan cheese and breadcrumbs on top of your oven-baked dish for a wonderful finish. Ymmmm!

Spanish & Mexican Chicken and Rice
These two rices are both yellow and may seem to be the same but they are actually different.
Spanish rice is a more yellow rice because of the saffron or turmeric used with milder flavors from vegetables. Mexican rice uses spicier flavors such as jalapeños, green chilies or cumin and may be made with a combination of tomato sauce and water or broth for a rich red color.

Cuban Chicken and Rice
Known as arroz con pollo throughout Spain and many Latin American countries like Cuba or Puerto Rico, this is similar to Mexican rice. Except it uses uses a tomato and broth mixture to cook the rice along with cumin, annatto and turmeric to get the characteristic color. The chicken is cooked with the rice rather than on the side or on top.
