When the sun comes out, the snow and ice melts and the winter coats are replaced by sundresses and shorts, it’s time to break out something else: the rum bottle!
Here are rum cocktail recipes for late winter and springtime tied to three major annual celebration days: Valentine’s Day, Easter and Mother’s Day. With, for a tasty bonus, one more drink that can be enjoyed anytime.

Valentine’s Day Cocktail

The Heart Beet
Ingredients:
• 2 oz. Barceló Imperial Rum
• 4-5 oz. Ginger beer
• ½ – 1 oz. Fresh beet juice
• Fresh lemon slices for garnish
• Pomegranate seeds for garnish
• Mint for garnish
Preparation:
In a shaker add rum, beet juice, and ice. Shake & strain into glass. Top off with ginger beer. Garnish with a lemon slice, pomegranate seeds, and mint. Sip happily.
Easter Cocktail

The Hazelnut Dream
Ingredients:
• 1½ oz. Barceló Gran Añejo Rum
• 2 oz. Hazelnut Liqueur
• 1 oz. Heavy cream or Half and Half
• Hazelnut chocolate for garnish
Preparation:
In a cocktail shaker add Barcelo Gran Añejo Rum, hazelnut liqueur, and ice. Shake & pour heavy cream into the bottom of the glass. Strain the cocktail into the glass with heavy cream. Garnish with hazelnut treat.
Mother’s Day Cocktail

Flowers For Mom
Ingredients:
• 2 oz. Barceló Imperial Rum
• ½ oz. Fresh lime juice
• 1 egg white
• ¼ oz. Campari
• ¼ oz. Pineapple juice
• edible flowers
Preparation:
In a cocktail shaker add Barcelo Imperial Rum, lime juice, Campari, pineapple juice and egg white. Shake well & strain the cocktail into a glass with ice. Garnish with lime wedge and edible flowers.
Anytime Springtime Cocktail Recipe

The Blackberry Please!
Ingredients:
• 1-½ oz. Barceló Dark Gran Añejo Rum
• A handful of blackberries
• 3 oz. Ginger beer
• 1 oz. Fresh lime juice
• Mint for garnish
• Large ice cube
Preparation:
In a serving glass, add blackberries and mint, muddle. Save some berries for garnish. In a cocktail shaker add Barceló Dark Grand Añejo Rum, lime juice, & ice. Place a large ice cube in the serving glass with the muddled fruit. Shake & strain the cocktail into the glass. Top with ginger beer. Garnish with blackberries, lime wedge & more mint.
